Crestan is Davide Spillare's calling card. His entry level Garganega that is bright fresh and elegant. Davide is a member of VinNature, a group of 180 winemakers from around the world who all follow natural winemaking principles. An early student of the natural wine pioneer Angiolino Maule, he embraced biodynamics and natural winemaking with his first release in 2007. For Davide this means no interference in the vineyard or cellar, spontaneous fermentation, minimal sulphur use (under 20mg/liter), no filtering or fining and most importantly a deep and abiding respect for the land his family has farmed for generations. His vineyards, he says simply, are on loan and in his safekeeping for future generations. The focus of his estate is Garganega, one of the most important white grapes of Italy and one that is perfectly at home in the basalt soils of Gambellara.

Elbling is enjoying a small renaissance among German importers these days... but we’ve had this grape in our back pocket for years. A great old Germanic wine grape with a long history traceable to imperial Roman times, it was Germany's most cultivated variety until the early 20th century. Today its range is limited to the cool, steep banks of the Obermosel (southern Mosel) river valley and neighboring Luxembourg—where the Mosel discreetly becomes the Moselle. Light bodied, low alcohol, and dry as a vodka martini, Elbling is like a Teutonic answer to Muscadet. It's perfect for chilled oysters, river fish, and light summery fare like salads, raw foods, fresh greens and grains. Inexplicably, it has remained unsung outside its local borders…. until now. 100% Macabeu. Natural method. This wine with its special colour is a white wine vinified in the same way as a red wine with a longer maceration time. 90% Merlot, 5% Cab, 5% Cab Franc from Bordeaux, France. Sustainable converting to Organic. Juicy blackberry and plum notes with lush, supple tannins. The vineyards and winery are just ten kilometers from downtown Bordeaux in the Entre-Deux-Mers region. The winery is certified sustainable by HVE and after successful trials in 2018, they began the organic certification process in 2019. Only organic products are used for vineyard management. The vines average 35 years-old and are grown in limestone clay, siliceous, and gravel soils that give the wine a lot of freshness and balance. Once harvested at their best maturity, the vinification is handled in the modern cellar with thermo-regulated stainless steel tanks used to extract soft tannins and deep color, respecting the fruits’ true expression. In the bottle, you’ll find poetry, art, and inspired conversation.

David Schildknecht, the Austrian specialist for Robert Parker's Wine Advocate, describes Roland Velich and his Moric wines this way: "Roland Velich is working with old vines in the heart of “Blaufrankisch country” – Mittelburgenland, specifically Lutzmannsburg and Neckenmarkt. (Only his winery is located in Grosshoflein.) His are wines in a style you will not encounter anywhere else in Austria: Blaufrankisch vinified as if it were Grand Cru Burgundy, and from hillsides (including terraces) and pre-clonal vines the like of which you will not find being cultivated in most of Mittelburgenland. On the palate, it delivers a striking balance of vibrant red fruit flavors and an unmistakable mineral core born from volcanic sands. Vaeni, Xinomavro, Paros, Greece, 2022

A noble, indigenous variety, which has been cultivated on this land for hundreds of years. Also known as Mavro Naoussis, Popolka, Popoliko or Mavro Xino. Dry wine, marketed with The Naoussa Appellation of High Quality Origin, is exclusively made from the red grape Xinomavro, which is well adapted in continental climates. Xinomavro can be found in many areas, unlike other varieties. However, it is in the Naoussa commune that maturity can easily reach optimum levels. The grapes appear an excellent aromatic potential during fermentation and wood ageing. Moreover, there is a balance of sugar levels, acid and tannins. The climatic factors are favourable for these hillside vineyards. The altitude varies, beginning with 150m and reaching 350m. The vineyards are located on the southeastern slopes of mount Vermion, protected from the cold northern winds, while they take advantage of the sun's warm rays during midday. Wines that are marketed with an «Appellation of Origin» are noted for their dark red colour, characteristic fruity aromas which evolve a rich bouquet during their one-year ageing in oak barrels (obligatory through legislation). A kaleidoscope of raspberries, damson, vanilla and cinnamon compliment a well structured, rich and sufficiently tannic to age wine.

Voria, a highly popular line of organic, biodynamic, and unfiltered pét-nat (petillant naturel) wines made by the Sicilian winery Porta del Vento. The estate is situated in Camporeale, about 2,000 feet up in the mountains overlooking Palermo. Because of the constant, brutal winds ("porta del vento" translates to "door of the wind") and the large shifts in temperature, the estate is able to naturally maintain racy acidity and freshness in their grapes.The "Voria" lineup primarily features three variations: Voria Bianco: A crisp, hazy sparkling wine made from 100% Catarratto grapes.

Site: Jerez de la Frontera Grapes: Pedro Ximénez Solera Aging: 15 years Tasting Notes: A great nose of exotic spices and almost red fruits combine with more classic caramel overtones. With great acidity the wine is light on its feet and almost refreshing. In 1832 the master carpenter José Antonio Sierra founded El Maestro Sierra. As one of the top co-opers in the area, José Antonio was the person who made the barrels for all of the big Sherry houses. After years of making barrels for everyone else he came to the conclusion that he could produce Sherries that were better than what the big Sherry houses were cranking out, so he went about opening up his own little winery. This little up-start Sherry producer was not welcomed in world of nobility-owned Sherry houses and so the local gentry did everything they could to stop him. Fortunately the quality of his sherry prevailed over their efforts and José Antonio Sierra became one of the top Almacenistas (stock-holders) of high quality Sherries. Poking fun at his struggle, the label depicts an allegorical fox hunt with the nobles hunting El Maestro Sierra’s fox.

Vermut Rojo Cocktail

Atxa Vermut Rojo is made in accordance with an old recipe passed down through the Acha family. It is made from a blend of a neutral wine and alcohol macerated with a selection of traditional botanicals including wormwood, gentian, and cherry. Flavors of licorice and wild herbs framed by bitter components and a markedly wild berry fruit. We serve it as an aperitif over ice and garnished with an orange wedge with Manzanilla olives: Off Sweet, Bitter, Salty. Straight up Umami.
